GREEK CREAMY RICE PUDDING
Greek rice puddings are dense and creamy, also called rizogalo. Rice pudding has a thick texture more like custard and the pudding comes in various flavourful tastes like vanilla, lemon peel or orange zest. It can serve warm or even cold and it tastes delicious. Kinds of Rice Best For Making Rice Pudding:-
Arborio is considered to be best for making rice pudding or you can use any short-grain starchy rice so avoid using long rice.
Ingredients Required To Prepare Rice Pudding:-
150 g or ¾ cup Arborio rice
1-2 cups of water
Pinch of salt
4 Cups of Milk
Cream around 1 cup
2 Tbsp cornstarch
Sugar according to your taste or you can ¾ cup of sugar
Cinnamon for garnishing
You can try various flavour variations to give the pudding a middle eastern flare. Instead of adding vanilla, use rose water with some pistachios instead of cinnamon. You can use almond or coconut milk if you prefer vegan or if you want to reduce fat then you can also omit cream too.
Instruction To Prepare Rice Pudding:-
Put the water in a heavy saucepan, add rice and a pinch of salt into it and bring them to a boil. Cook the rice for 20 minutes on a low medium flame until the rice becomes soft. Add more water if required.
Add milk, cream, and sugar in the same bowl and cook all of them until the rice becomes softer and starts to thicken.
Dissolve 3-4 tbsp cornstarch in water, add this paste into the bowl and stir all the things continuously.
Cook all the things until the rice pudding get thick. Add more milk if the pudding becomes too thick.
Remove the heat and some drops of vanilla extract into it.
Transfer the Greek rice pudding to a serving bowl and dust some cinnamon into it. You can serve it warm or chilled too.
Important Tips:-
Although Greek Rice pudding is a very simple recipe with some basic ingredients it requires a lot of attention you must follow while making pudding.
Stir the Rice continuously to avoid sticking the rice in the cooking bowl.
You must focus on the intensity of cooking rice, it can’t be overcooked by adding extra water and it can be undercooked by avoiding extra water.
Once the Rice pudding is cooked add some extra warm milk to it if it looks thick too.
And lastly, be generous with cinnamon.
